Diastase

Pancreatic Diastase enzymes function to catalyzes the breakdown of starch into maltose. Diastase is a starch-liquefying enzyme, principally alpha-amylase, derived from porcine pancreas glands. Alpha-amylase is an enzyme, which catalyzes the hydrolysis of alpha-1, 4 glucosidic linkages of polysaccharides.
